Chilli Con Carne

Post by thelip »

Been following this recipe recently but it's perhaps not that great so anyone care to share their preferred recipe? Want it to have a bit of heat but, bearing in mind that I want to give some to my 1 year old daughter, I don't want it burning hot. What I do want is for it to be really tasty.

Looks about the same as what I use. I use cumin seeds though, heat them in a dry pan and then gring in pestle and mortar, lovely aroma and maybe gives more flavour?

I use this one. We tone down the spices for the kids, put their portions to one side to cool down before adding a bit more. Also use a bit of sour cream/yoghurt on the kids' portion.

Ooh dear, the above recipes both use sugar (?!) - that's not "tasty" - but CINNAMON is my recommended ingredient for a decent chilli con carne.

Marmalade is supposed to be very good (my mates used it) and can also help neutralise a too-strong chilli for kids/wimps.

Didn't know you had roots in Mexico

I like to add a little dark chocolate in at the end, gives it a lovely richness and offsets the heat.

Surely it should be kidney beans that are added?

Cumin is the key. Seeds and some ground.

I like to lob some cashews in also.

I have never linked cumin, or a lot of the other ingredients mentioned to Mexico, so I am enlightened.

Not cumin, but mexican oregano and cinnamon are specifically "authentic" ...

Oregano isn't a major shock but: Paprika, Marjoram, Thyme?

My point is that is was peasant food, so it should be kept simple; and I don't use beef stock or chili powder (only fresh).

Peasant food it may have been but there's no reason why you shouldn't improve it blah. Do you put your rags on and go and sit in your shed to eat it too?
