What's the best way to cook asparagus?
With white asparagus I just cut the ends off, peel it a bit and then boil it with a bit of sugar and salt. I heard green asparagus is best roasted.
Any ideas as there must be more things to do than just boil it?

Don't think I've been presented with the white version.

Does anyone boil in 2011?

I thought we all steamed.

I think it's popular in Germany and we get it here in Netherlands too.

When I was in Germany over Easter, they served the white asparagus with Hollandaise Sauce, Schnitzel and boiled potatoes - yum yum.

The white ones can be a little tougher so, although steaming does work I often prefer to boil. You can actually buy an asparagus pot. It is an oblong metal container with holes in it. The Asparagus are able to stand in it, spears facing upwards. Then you put into a pan filled with hot water but make sure the water only goes half way up the asparagus. Then stick on a lid so the tops get steamed and the bottoms boiled!

As for Green Ones - I will steam and just eat with mayo or I use a recipe similar to this, although in the pan with the toasted hazelnuts, I also add tiny cubes of bacon/pancetta and diced garlic.

We cook it on a griddle pan.

Key rule - don't over cook.
